An unusual and new wine for Ben Murray Wines - Sapidity - whose true definition is as 'a pleasant and appetising flavour'. Sounds good to us!
When thrown the challenge of making a wine from varietals not entirely within the expected realm of Ben Murray, winemaker Dan went a little left field...and Adriatic!
White grapes were treated initially as reds, crushed and sent to an open fermenter. During ferment the juice was pumped over the skins and pressed through the basket press. Fermentation was completed half in tank, and half to oak barrels. Once dry - it was off to bottle! The result : hints of marzipan, orange peel, marmalade, tropical fruits...it's a jumble and it is fun!
